Bienvenudos French Spirits in Mexico!

It all started with a French Pastry Chef wronged in Mexico…And the Pastry War between France and Mexico ensued. Lucky for both countries, a peace treaty was signed in April of 1840, and French and Mexican goods – including each country’s fine spirits – could once again be exchanged. But not all of France’s finest spirits could be found in Mexico…

Until tonight.

Pangea is proud to present the fine portfolio of French spirits from Maison Ferrand in México for the first time ever. How will we celebrate the arrival of Pierre Ferrand Cognac, Plantation Rum, Citadelle Gin and Pierre Ferrand Dry Curacao? The only way we know how – by throwing a bang up party at Mexico City’s Bang Bang featuring special guest bartenders from the U.S. Join us so that together we celebrate the appreciation of fine spirits and finer cocktails and we toast to Mexico and France and the U.S.!

Jack McGarry: Best in the Business
Due to last-minute health issues, Jack McGarry of the Dead Rabbit is unfortunately unable to be at Tales of the Cocktail Mexico. Instead, the Head Bartender of the Dead Rabbit, Jillian Vose (former head bartender of the equally legendary Death & Co, NY) will be taking Jack’s place. We wish Jack a speedy recovery, and look forward to introducing you to Jillian, one of New York’s most talented mixologists and the person responsible for the Dead Rabbit’s multi-award-winning cocktail program on a day-to-day basis.

It’s hard to believe that Jack McGarry is still under 30 given the amount he has achieved as a bartender and now a bar owner alongside Sean Muldoon at The Dead Rabbit in New York City.

Jack’s cocktail style is as impressive as it is unique with an unparalleled combination of original thought and meticulous attention to detail. And then there's his speed and grace which make him one of the best in the business to watch work.

Come and learn from Jack about how to stay motivated as a bartender, pick up tips for successful management of your bartender team and where to seek inspiration in an ever more creative era of mixology.

William Grant & Sons are proud to present this session with Jack McGarry, moderated by Tim Herlihy and Charlotte Voisey. Cocktails from The Dead Rabbit menu will be served.

Perfectly Poured Beer Cocktails
On a hot summer day there’s nothing like cracking open a cold beer.  Refreshingly delicious, beer is great on its own but it also has the ability to add carbonation, texture and a variety of complex flavors - ranging from citrus to coffee - to any cocktail.

The Myth of Precision
Do Your Measures Measure Up?

When is a Kilogram not a Kilogram? When it’s ‘The Kilogram’, the official standard measure which is getting slightly lighter every year, mocking the very idea of timeless, perfect precision in measurement of weight and volume. But rest assured, the Ounce is no better, being one of a half dozen wildly inconsistent measures used under the Imperial System.

The modern bar world has an almost religious belief in the importance of measurement, mocking those unbelievers who don’t use the jigger. But is there such a thing as true precision? Are our jiggers and measuring cups calibrated correctly, and were they ever reliable in the past? We treat old cocktail books with a lot of reverence, but their recipes made up of gills, ponies and drams today make no sense, if they ever did. In this seminar, we’ll explore the history of ‘weights and measures’ and decipher the quirks hidden in the measurements in old cocktail books, by demonstrating classic recipes made with one of the world’s largest collections of historical cocktail equipment. We will examine how the world has arrived at two incompatible measurements – the ML and the OZ – and why almost every country has a different ‘standard’ measure, and what that means for bartenders around the world as they adapt recipes from other countries and other eras. We’ll look at the pros and cons of today's bar tools and share research on how you need to know the quirks of your individual tools to be able to make better drinks. And we’ll also discuss the various methods – free pouring, jiggering, batching and more – by which you can ensure you are serving your guests the best drinks possible, wherever you are in the world.

Anthropology of the Modern Bar
The bar may be a place to drink, to eat, to socialize, to flirt. But it’s one more thing too: the greatest, real-time anthropology experiment ever devised. Bars are places of commerce, competition, mating, debating, dominance struggles, even brawling. They’re populated by charmers, bullies, beauties, introverts, extroverts, depressives and performers. People arrive solo or in social packs or in pairs. They fight for turf—the spot at the bar, the next free table, the seat nearest the TV when the World Cup or the NFL are on. And all of this dynamic energy is overseen by a single shaman, wiseman, peacemaker and lawgiver: the bartender. His or her world is nothing short of the entire human experience writ small.

Understanding how the social system of the bar operates offers more than just an intriguing peek inside the human condition. It also provides insights into how to run a better bar—how to facilitate the interrelationships that are one of the biggest reasons bars exist at all, while keeping conflicts, foul-ups and breakdowns to a minimum. Join Claire Smith-Warner (frequenter of many bars), Jeffrey Kluger (science editor for Time magazine and author of multiple books on human behavior, including The Narcissist Next Door and The Sibling Effect) Tristan Stephenson (bar owner and author of The Curious Bartender) and Vasilis Kyritsis (owner/bartender at The Clumsies) to explore the hidden complexities—the world within a world—that is the modern bar.

In Praise of the Vodka Martini
The Vodka Martini remains one of the world’s most popular cocktails, but in the current ‘cocktail renaissance’ it sometimes can seem that its acolytes must profess their affection in hushed tones, lest they risk the opprobrium of the ‘Cocktail Taliban’. But the Vodka Martini, or the Kangaroo Kicker, to give it the proper name, is a drink with a long and noble history. It’s roots go back nearly a century, and its Golden Age, from the 1950s to the present day, is arguably longer than that of any of the various Gin Martini variations. Join vodka lovers Jacob Briars and Joe McCanta, together with Dale ‘King Cocktail’ DeGroff to learn about the long evolution of the Vodka Martini, its explosive popularity as a drink that typified the sleek, Modern age of the 1950s and 60s, We’ll show you how the world’s finest bartenders are re-imagining the Vodka Martini for today’s drinker, and why there may be no more perfect cocktail to serve with food.

Genie In a Bottle
There was a time when Spirits bottles were thought to be time capsules. When the cap or cork went in at the end of the bottling line, the perfect aromas and flavors, carefully crafted by the distiller, were sealed in a deep sleep ready to be awakened by a bartender or host. These days the forensic attention to detail of the modern bartender and consumer has discovered that there is more to bottle age than was once thought and this seminar will decode the mysteries of how spirits age. Through a range of controlled experiments we will illustrate the effects of age and environment on spirits in bottle; decipher the aromas that are gained and lost with time; recommend the ideal storage conditions to keep spirits in mint condition and break down which spirits are the most at risk from change in bottle. Panelists from the world of vintage spirits and science will be on hand to answer your questions about how to build and maintain your collection of dusty bottles as well as tackling what is and is not worth opening.

Mint: Keeping Cocktails Fresh Since 1492
Through banks of green moss, midst flowers and gently trickling streams, nestles the ideal place to pick tender shoots of mint…

Mint can actually be grown in most places on earth providing a common, year-round flavor that keeps drinks bright and fresh in an illuminatingly pleasant, offensive to no one, perfectly unisex way. Mint is nothing new. Mint is found in almost every bar on the planet and in many cocktail recipes: the old and new; the robust and refined; the classic and the tiki.

But where is mint from? What was it used for before the Julep came along and what, really, is the best way to store it?

Charlotte Voisey, mixologist, spirits educator and host of The Proper Pour along with Peter Vestinos, The BarMedic, President of the USBG Chicago Chapter, and Beverage Director of The Betty, present a seminar riddled with refreshment.

Discover the route mint has taken from its mythological make up to its place as herb king of the cocktail. Find out which of your favorite Amari, Vermouths and Liqueurs use mint as an ingredient Taste what happens when an Old Fashioned blooms to life as a Mint Julep, enjoy the famous heir to the rarely referenced Rum Rickey and be convinced that even creamy drinks taste good when made with mint! Learn how to grow your own mint or how to maximize the mint on your doorstep. And see, touch and smell different varieties of mint presented in the context of cocktail applications.

Rarely does a cocktail not benefit from a copious amount of mint, spanked, bunched tight and thrust down into the ice soaring tall and plenty with intoxicatingly good aroma.

Come celebrate the lord of the leaves!
